Good for you! I've been trying to waste less food for a while now. We tend to make a lot of stock with leftover veggies, as well as casseroles and omlettes to use up other odds and ends.
Thanks for your comment! I am a little nervous about making veggie stock as I've never done it before. I just chopped and froze some tomatoes before they went bad so I can use them later for something. I agree, making omelets is a great way to use up leftover whatever--you can put just about anything into an omelet!Good luck with your efforts on reducing food waste!
